Achieving Professional, Clean Slices Every Time
Cutting into a dense, fudgy chocolate truffle cake can easily result in messy slices if the ganache sticks to your knife blade. To achieve pristine, sharp cuts that show off the distinct layers of cake and filling, you must use a long, thin-bladed chef’s knife or a slicing knife. Fill a tall container with extremely hot water, dip the knife blade into it for several seconds to heat the metal, and wipe it completely dry with a clean towel before making your first cut. Press straight down through the cake in one smooth motion, wipe the blade completely clean of any residue, and re-dip it in hot water before attempting the next slice.
